Food poisoning is the illness caused by eating food which contains bacteria or viruses. When person eat such food the microorganism start growing, causing an infection. There are several bacteria which causes food poisioning. Some of those bacteria are salmonella & campylobacter, clostridium perfingens, Listeria, staphylococci, Escherichia coli.



Salmonella & campylobacter
This type of bacteria is found in warm blooded animals such as cattle, poultry and swine. This bacteria is found in raw meat eggs & unpasteurized dairy products.



Clostridium perfingens
This type of bacteria is mostly found in the vegetables & crops that come in contact with the soil. Infection from this bacteria occur when soups gravies made from meat, fish are not properly stored or left unrefrigerated for several hours.



Listeria
This bacteria is found in the raw food of the animal origins.



Staphylococci
These bacteria occur normally on the skin of nose and throat. And this bacteria is transmitted to food through hands.



Escherichia coli
This bacteria is found in the intestine of healthy cattle. Infection through this bacteria is caused by eating uncooked beef
Many people suffering from food poisoning experience gastroenteritis. The symptoms of food poisoning start soon after the intake of the contaminated food. However the most common symptoms of food poisoning includes abdominal cramps, watery or bloody diarrhea, nausea & vomiting, fever, headache, abdominal ditention & gas. Mild cases of food poisoning can be treated as gastroenteritis with replacement of fluid. Control of the nausea and vomiting is of the prime importance in food poisoning.



To control food poisoning one should take care of personal hygiene. Hands should be properly washed before eating something. Hands should be wash after using toilet or changing dypeher. After coughing sneezing, blowing nose hands should be properly cleaned. Hands should be washed after touching raw meat, sea food, or poultry eggs etc. Usage of the cutting boards for cutting raw fish, poultry or meat should be avoided. Utensils should be properly cleaned after using. Poultry, beef and egg should be properly cooked. Foods made from raw or undercooked egg, poultry, meat and unpasteurized milk should be avoided. Cross contamination of food should be avoided.
