Why would bottled water go bad?

You are right. Why should water go 'bad'? According to FDA if bottled water is produced in accordance with the Current Good Manufacturing Practice (CGMP) regulations and quality standard regulations, then it is considered to have an indefinite shelf life. Of course you need to store the bottles properly. If water is stored for a longer period, it may develop some unpleasant odor and taste. FDA recommends that an expiry is printed on the bottles but it is not mandatory.
